The French gene in my mother very evident from her choice of cuisine. She is very impartial towards continental cuisine even though she has a daughter who is a brilliant chef😉.
Nonetheless, her love for continental cuisine is insane. Because of my full time job I cook rarely and when I do I generally ask my folks what they would like to eat. My dad is a hard-core curry man so it's easy to please him though he is my biggest critic. Mum I never have to ask, because I know exactly what brings a smile to her beautiful face.
So now that I am on a diet and watching what goes into my mouth, in my spare time I think of what will taste good. I cook in my head first, experience the taste (without actually tasting) on my tongue and then decide what I'm going to cook.
So, using this same process I gave birth to the idea of making white sauce with oats flour and milk instead of flour(maida). What started off as an experiment turned out to be the healthiest and tastiest sauces I've had.
It brings me great joy to share this spontaneous recipe with you.
Ingredients :
400gms Chicken roasted
6 chicken sausages
1cup green peas
1cup sliced carrots
1cup brocoli florets
1 cup green beans
1 cup mixed coloured peppers
1½ tsp oats flour
350ml milk
Garlic powder
Onion powder
Salt and pepper to taste.
3 Tbsp oil
Method;
For roasted chicken:
Heat oil in a wok, add the chicken pieces and fry on high flame on each side for 3 mins. Lower the flame and cover with a lid and allow to simmer for 15 mins.
Slice the chicken sausages and add it to the chicken.
Sprinkle with salt and pepper and stir fry.
Cover with lid and allow to cook for another 5-7 mins.
For saute veggies :
Heat oil, add the sliced carrots, brocoli florets and French beans along with some salt and pepper and stir fry it on medium flame. Cover with a lid and allow to cook for 10 mins.
Add the boiled green peas and mix well. The veeggies should be slightly crunchy.
Now add the roasted chicken and sausages to the veggies and transfer it into a glass(bake proof) container.
For the oats sauce:
In a sauce pan heat some butter or oil and add the oats flour and saute for 2 mins. You will gets a thick batter like consistency to which slowly pour the milk and using a whisker keep whisking to form the sauce. Add salt, onion and garlic powder and whisk till desired consistency.
Remove from the flame and pour over the chicken and veggies.
For baking:
Add grated Cheddar or parmesan over the sauce covered chicken and veggies and bake for 30mins or till the cheese is golden brown.
Serve with garlic bread or any bread of your choice.
